No-Bake Brownies

 
 

Barry balls!  I'm going to tell you in advance, you are going to love this recipe... and at some point you might actually eat an entire batch in a single sitting.  If you make this in a Vitamix or other high powered blender, it comes out hot and tastes just like cookie dough!  The exciting part though is that this recipe is packed with guilt-free whole food goodness.  The recipe that I have below is more of a guide, you can increase/decrease the sweetness as well as the chocolatey-ness to your tastes.  You can also make this more or less "healthy" depending on your mood.  If you do not have a high-powered blender this is still possible in a food processor.  The blend won't be as uniform and you will have to play around a little to get them to stick together (instructions in notes), but it will still be delicious!  I will make a food processor recipe for this in the future, but for now I had to post this one because it. is. epic. You can flatten these out and turn them into bars or brownie squares, or simply roll them up into the balls shown here.

These bars are a great grab and go snack.  You can also use them as part of your topping for oatmeal or on top of plant-based ice creams for dessert.

Ingredients

  • 5 medjool dates, pit and remove stems
  • 2 tbsp ground flax seed
  • 1/3 cup coconut butter or 2 tbsp coconut oil (coconut butter is the whole food variation of oil)
  • 1/2 cup raisins
  • 1/4 cup vegan chocolate chips or 1-2 tbsp cocoa powder (cocoa powder variation has no added sugar)
  • Dash of cinnamon
  • 1/2 cup raw almonds
  • 1 cup old-fashioned (rolled) oats
  • Dah of vanilla powder (optional)

Directions

  1. Add the soft ingredients to the bottom of the blender (dates, flax seed, coconut butter, raisins, chocolate chips, cinnamon)
  2. Add oatmeal and almonds
  3. Turn your blender on high and push the oatmeal and nuts down into the blades as it blends.  The Vitamix allows you to do this safely while the blades are spinning, but if you are using a different device without this capability simply stop the device and push the mixture down.  Do this a few times until everything is well incorporated.  See the notes section at the bottom of this post about lower powered devices and food processors.

In this video I demonstrate how I make these bars in the Vitamix for my other bar recipe.  The recipe is different, but the technique is the same.

Notes

If using a food processor there are many different things that you can do to make this easier to blend.  Such as using almond butter, instead of whole almonds.  Using instant oats, instead of old fashioned oats.  I would also eliminate the raisins and make the base from 1 cup of medjool dates instead.  Lastly, if the bars aren't sticking together add a bit of agave nectar and that should be the trick.  I will post a food processor recipe soon, stay tuned!

Also, if not using a Vitamix, try warming these up a bit.  It tastes amazing!
