Sweet Chili Rice Wraps

I love rice wraps!  They’re so quick and easy to make yet packed with nutrition.  I consider them a lighter alternative to the more traditional wheat wraps and a great option for those in search of gluten free options. There are limitless combinations on how to prepare them which prevents them from ever getting old.  If you have access to an Asian market, they are my favorite places to buy rice wraps.  Asian markets typically have many different kinds and brands to experiment with!

For the chili sauce I used store bought Thai chili sauce that you can typically find in the international section of the supermarket.  It may also help to buy pre-chopped/shredded vegetables to cut down on your prep time.

Ingredients

  • Pineapple
  • Red cabbage, shredded
  • Avocado
  • Green leaf lettuce, rough chopped
  • Carrots, shredded
  • Thai sweet chili sauce
  • Rice wraps

Directions

  1. Prep all of your ingredients.  Only wet rice wraps when you are ready to roll.
  2. Prepare a bath of warm water.
  3. Wet a paper towel, squeeze out the extra moisture, and lay it on your working surface.
  4. The wraps should feel like thin plastic when you take them out of the package.  Submerge or dip each side briefly into the warm water and lay wrap on your moist paper towel.  At this stage the wrap may still feel somewhat rigid but that is okay, it will continue to soften while you begin laying out your filling.
  5. From one side of the wrap, add filling.  Leave a gap and then all one more small line of ingredients before the end of the wrap.
  6. From the side with the most filling, fold the wrap over once until it touches the wrap.  Fold in the sides and continue rolling into a tight cylinder.
