Classic Chia Pudding

 
 

Did you know that chia seeds are the plant behind those hilarious chia pet plants from the 90s? It always cracks me up when I eat them because I think of the old school commercials with that annoying slogan that I used to torment my family with back in the day.

The basic recipe for chia pudding is as follows. I always make my own almond milk that I sweeten with dates, you can find that tutorial in the videos section.

Preparation Time: 5 minutes, soak overnight

Ingredients

  • 1 cup almond milk
  • 1/4 cup chia seeds
  • 1 tsp maple syrup (more or less to taste)
  • 1/4 tsp vanilla powder (omit if your almond milk already has vanilla)

Directions

Soak overnight and then add toppings and/or additional syrup if you like. I really enjoy this mango, blackberry, strawberry blend paired with this so give it a shot! I used frozen mangoes and blackberries that I simply let defrost on the kitchen counter for 30 minutes.  Here I recommend using fresh strawberries.
