Vegan French Toast and Chickpea Omelet

This recipe pairs perfectly with my chickpea omelet recipe.  Both recipes use chickpea flour, which is something that you might not already have in your cabinet.  This is a great excuse to buy some!  For the omelet recipe click here!

French toast is very easy to make vegan.  You can make it with very few ingredients, you can make it as healthy as you like depending on the type of bread that you choose, and you can throw it together super fast!  Wins all around people!  This is one that you have to try.

Ingredients

  • 1 cup almond milk, I use home made - For that recipe click here
  • 2 Tbsp. all purpose flour or chickpea flour for gluten free - Chickpea flour is called besan in Indian markets, seek this out for cheap flour!
  • 1 and 1/2 Tbsp. agave nectar
  • 1/8 tsp. vanilla extract or a pinch of vanilla powder
  • 1 tsp. cinnamon powder
  • Toppings: banana and/or maple syrup OR your favorite toppings

Note:  Use gluten free bread and chickpea flour for a gluten free alternative.  I keep my chickpea flour in the fridge so that it stays fresh when storing long term

Directions

  1. In a medium bowl mix the almond milk, flour, agave, cinnamon and vanilla.
  2. Pre-heat a skillet on the stove and melt a bit of vegan butter, just enough to lubricate the pan.  Or, you may opt to prepare this oil-free by just dropping the toast onto the dry skillet on step 3.  If you find that the bread is sticking too much, just spray a small amount of spray oil onto pan for lubrication.
  3. Dip bread into mixture and place onto hot skillet.  Cook 2-3 minutes on each side until golden brown.

Serve

Serve with chopped bananas and maple syrup, or your favorite toppings for french toast!
