Ingredients

  • 2 1/2 cups old fashioned rolled oats
  • 2 cups homemade nondairy milk (or store bought), plus more for serving.
  • 4 medjool dates, for sweetness - pitted and diced
  • 2 finely diced gala apples
  • 1/2 cup raisins
  • 1 1/2 tsp cinnamon
  • 1/2 tsp freshly grated nutmeg.  Note:  Fresh nutmeg is lighter (less bitter) and sweeter than dried.  To grate nutmeg use a classic citrus zester/grater.

Directions

  1. Preheat oven to 375F
  2. In a blender, blend medjool dates and nutmilk.
  3. Combine ingredients in a large bowl and pour into 8 x 8 pan (I used glass)
  4. Bake at 375F for 30 minutes or until liquid is mostly evaporated and before the top starts to crisp.

Note: You can eat this hot out of the oven as is, or in a bowl with a splash of almond milk and a drizzle of syrup. Optionally, cool these in the refrigerator and cut into bars for a grab and go snack or eat in a bowl as mentioned earlier.
