Barrycakes (Pancakes)

Ingredients

Dry:

  • 2 3/4 cups whole wheat pastry flour

  • 1/4 cup all purpose flour

  • 3/4 cup sugar

  • 3 tsp baking powder

  • 1 ½ tsp baking soda

  • ½ tsp sea salt

Wet:

  • 1 and 3/4 cup almond milk

  • 1 apple sauce cup (4 oz)

  • ½ lemon, squeezed

  • Apple Spread or apple butter (topping)


Optional Add-ins

  • ½ cup blueberries

  • 1 tsp cinnamon

  • 1 tsp vanilla powder or extract

Directions

Warning: This makes a lot of pancakes!  If you do not have a pancake griddle I recommend cutting this in half.  I make big batches because these refrigerate and freeze well.  They make great snacks with apple spread and reheat in about 60 seconds in the microwave.

  1. Pre-heat non-stick pancake griddle to 325F – Do not use spray oil.

  2. Mix liquid ingredients.

  3. In a SEPARATE BOWL, mix dry ingredients.

  4. Add wet ingredients to dry ingredients and stir briefly. Do not over mix the batter, this will prevent them from being fluffy.

  5. Batter should be very thick and not runny. Saturate the batter and go no further, if your batter is still dry after adding all of the liquid ingredients, add additional almond milk.

  6. With 1/3 cup measuring cup, scoop pancake batter onto the griddle. Since the batter is thick, you will need to use your finger or the back of the measuring cup to smooth them into circles on the griddle.

  7. Do not flip the pancakes until it appears that the tops have begun to dry out, if you try to flip them before this point they will either stick to the griddle or break as you are trying to flip them or both.

  8. Cook until golden brown on each side.

  9. Cool on a cooling rack for 10 minutes before serving. Reheat them in the microwave to get them hot to serve. (This process of resting after cooking and reheating in the microwave gets them extra fluffy).

 
 

Serve

Spread apple spread or apple butter on pancakes, lightly sprinkle with maple syrup and serve with berries and sliced bananas or your favorite fruits.
